Dulce de leche chocolate, also commonly called toasted white chocolate or caramelized chocolate, is a relatively recent addition to the chocolate spectrum. It’s basically a cooked white chocolate which takes advantage of the Maillard reaction (a chemical reaction between amino acids and reducing sugars that gives browned food its distinctive flavor) The heat turns the chocolate a nice milky-coffee color and coaxes out a totally new flavor profile.
